Guinness Brownies with Irish Whipped Cream

Ingredients:
4 eggs
¾ cup sugar
8 oz semi or bittersweet chocolate, chopped
4 oz white chocolate, chopped
6 tbsp unsalted butter, softened
¾ cup all-purpose flour
¼ tsp salt
¾ cup cocoa powder
1 ¼ cup Guinness Stout Beer
Irish Coffee Whipped Cream (see recipe below)
Additional Irish Whiskey

Directions:
Preheat oven to 375°F. Butter a 9x13" baking pan with additional butter. Place dark and white chocolates in a stainless steel bowl. Place bowl over a pot of boiling water. Stir periodically until the chocolate is melted. In a mixer with a paddle attachment, combine eggs and sugar. Beat until fluffy. Add melted chocolate to the egg mixture. In a small bowl, combine the flour, salt, and cocoa powder. Add this mixture to the chocolate/egg mixture. Add Guinness to the batter and continue to mix thoroughly. Pour batter into the prepared baking pan. Bake in the oven for 20-25 min. or until a skewer inserted into the center of the brownies comes out almost clean. Remove from the oven and let cool.

To serve, cut into 12-15 squares. Sprinkle a bit of additional Irish Whiskey on top of each square. Top with Irish Coffee Whipped Cream and serve immediately.

Irish Coffee Whipped Cream

15 min. prep

Ingredients:

2 cups heavy cream
2 tbsp Irish Whiskey
2 tsp instant coffee
⅓ cup powdered sugar

Directions:
Stir together whiskey and instant coffee until the coffee is dissolved. Whip cream until it starts to form peaks. Add powder sugar. Whisk until firm peaks. Stir in the whiskey/coffee mixture.

Cherry Topped German Pancake

(Serves 6)

Ingredients:
Cooking spray
5 eggs
1 ¼ cup flour
1 ¼ cup milk
1 tsp vanilla
1 tsp sugar
Dash of salt
Canned fruit pie filling (warmed) or soft baked apple slices work great too!
Cool whip/for garnish

Directions:

Preheat oven to 425°F. Place a 10 inch cast iron skillet on the center rack in a preheated oven or use 6/ one serving mini baking dishes and place them on a cookie sheet in the oven for 3 minutes. Meanwhile, mix ingredients 1-7 in a bowl and beat with mixer until blended. Remove hot bakeware from oven after 3 min. Spray the hot skillet or 6 individual baking dishes with cooking spray. Pour batter into the hot/sprayed pans. Return to the oven for 20-25 minutes for the skillet and 15-20 min. for the 6 mini baking pans. Cut into wedges or serve single portion baking dish ones. Sprinkle with powder sugar and top with warmed can cherries or any kind of warmed fruit; top with whip cream.

Thelma’s Banana Nut Bread

Ingredients:
½ cup vegetable oil
1 cup sugar
2 eggs beaten
3 ripe bananas mashed to a pulp
3 tbsp milk
½ tsp vanilla
2 cups flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup chocolate chips (optional)
½ cup chopped nuts (optional)

Directions:
Preheat oven to 350°F. Beat together oil and sugar, then add eggs and bananas, add milk and vanilla. Sift together flour, baking soda, baking powder and salt. Mix all ingredients and add nuts and chocolate chips. Prepare 9x5x3 loaf pan, grease pan and place waxed paper sheet on the bottom of the pan. Pour batter into the pan. Bake for one hour. Cool well on a wire rack for 5 minutes then remove from pan. This recipe can be adapted for muffins but just bake for 20 minutes at 350°F and yields 24 muffins. Enjoy warm or cold!
